Smooth and rich and cheesy, our Velvety Cauliflower Soup delivers spoonful after spoonful of satisfying taste. And if you're doing a double-take because you can't believe this is a diabetic soup recipe - well it is!!
What You'll Need
- 1 cup chopped onion
- 5 1/4 cups reduced-sodium, fat free chicken broth
- 5 cups cauliflower florets
- 1/2 cup reduced fat shredded Cheddar cheese
What to Do
- Coat a large saucepan with cooking spray. Over medium heat, cook onions until tender.
- Add broth and cauliflower; bring to a boil. Reduce heat to low, cover, and simmer until cauliflower is tender, about 20 minutes. Cool about 10 minutes.
- Transfer in batches to food processor or blender and process until smooth. Garnish with cheese and serve immediately.
