What You'll Need
- 1 cup frozen chopped onion, celery, bell pepper and parsley blend
- 5 1/4 cups reduced-sodium fat-free chicken broth
- 1 (10-ounce) package frozen mixed vegetables (corn, carrots, peas, green beans)
- 2 cups chopped cooked chicken breast
What to Do
- Coat a soup pot with cooking spray. Add onion mixture and cook over medium heat until tender. Add chicken broth and bring to a boil. Stir mixed vegetables into broth and return to a boil.
- Reduce heat to slow boil and continue cooking about 6 minutes, or until vegetables are tender. Stir in chicken and cook just until heated through.
