Just when you thought you couldn't snack on pizza, our recipe for Skillet Pizza Snack is here to prove you wrong! This easy recipe for one is just what you need when you're craving all of the goodness of a slice of veggie pizza without all the guilt that comes with it!
What You'll Need
- 1 tablespoon chopped fresh bell pepper (red or green)
- 1 tablespoon sliced fresh mushrooms
- 1 teaspoon chopped onion
- 1/3 cup fat-free mozzarella cheese
- 3 slices pepperoni (optional)
What to Do
- Coat a medium nonstick skillet with cooking spray; over medium heat, saute bell pepper, mushrooms, and onion 5 minutes, or until soft. Remove vegetables to a small bowl.
- In the same skillet over medium heat, place cheese in center of pan in a 4-inch circle. When cheese starts bubbling, place vegetables and pepperoni, if desired, on top.
- Cook 30 to 60 seconds, or until cheese is brown on bottom. Using a spatula, slide onto plate, then let cool 1 minute before serving.

I love that these are snack size. Sometimes you want the taste of pizza but not the work of making a full size one. Nifty!

Tried these. WOW from friends and family. Also tried some with parmesan cheese and they were fantastic as well. Definitely worth a try.
