Rain or shine, broiled or grilled, whatever the occasion, these year-round Garden-Fresh Burgers will never go out of style!
What You'll Need
- 3/4 cup dry bread crumbs, divided
- 1 tablespoon vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 3 cups warm cooked brown rice
- 1 medium carrot, peeled and grated
- 1/3 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
- 3 tablespoons light soy sauce
- 2 eggs
What to Do
- Preheat the broiler. Coat a rimmed baking sheet with nonstick cooking spray. Place 1/2 cup bread crumbs in a shallow dish; set aside.
- In a large nonstick skillet, heat the oil over medium-high heat. Sauté the onion, garlic, and thyme for 4 to 5 minutes, or until the onion is tender; transfer to a large bowl.
- Add the remaining ingredients except the reserved bread crumbs; mix well.
- Form the mixture into six 1/2-inch-thick patties and coat with the reserved 1/2 cup bread crumbs. Place on the baking sheet and broil for 6 to 7 minutes per side, or until golden and heated through.
