Brown Rice Pilaf

Love rice pilaf but can't include it 'cause it isn't on your diabetes diet list? Well, toss the white rice and try our Brown Rice Pilaf made with lots of healthy ingredients and you're good to go!
What You'll Need
- 1 package (10-ounce) frozen seasoning blend (onions, celery, peppers, parsley)
- 1 cup coarsely chopped fresh mushrooms
- 1 1/2 cup 99% fat-free chicken broth
- 1/2 cup brown rice
What to Do
- Coat a large saucepan with cooking spray. Over medium heat, cook seasoning blend until vegetables are tender. Add water if needed.
- Add mushrooms and cook about 2 minutes, stirring occasionally. Gradually add chicken broth and heat until mixture boils. Stir in brown rice. Reduce heat to low, cover, and simmer about 50 minutes. Add more broth if needed.
