What You'll Need
- 1/2 cup canned black beans, drained, rinsed
- 1 cup frozen corn kernels, thawed
- 1/2 cup diced tomatoes, drained
- 6 scallions, sliced
- 2 tablespoons lime juice
- Fresh chopped cilantro for garnish
What to Do
- In a salad bowl, combine all ingredients except cilantro; refrigerate at least 1 hour before serving. Garnish with cilantro and serve.
