Berry-Topped Spinach Salad

If you've never sprinkled berries atop a bed of greens, you must give this one a try! What a tasty treat the contrast of sweet and savory and crunchiness this Berry-Topped Spinach Salad has! Best part? It fits a diabetic diet perfectly!
What You'll Need
- 1 (10-ounce) package washed baby spinach
- 1 1/2 cup sliced strawberries
- 2 tablespoons Balsamic Vinaigrette (see Note)
- 2 tablespoons toasted chopped pecans
What to Do
- In a large bowl, toss spinach with strawberries. Drizzle with dressing and sprinkle pecans on top.
Notes
To make your own Balsamic Vinaigrette, in a small bowl, whisk together 2 tablespoons olive oil, 3 tablespoons balsamic vinegar, 1/4 teaspoon dried basil, and 1/4 teaspoon Dijon-style mustard. Makes 1/2 cup.
