What You'll Need
- 2 cups reduced-fat graham cracker crumbs
- 1/2 cup confectioners' sugar
- 1 1/2 stick margarine, melted
- 1 (4-serving size) package sugar-free instant French vanilla pudding mix
- 1 1/4 cup lowfat milk
- 2 cups fat-free frozen whipped topping, thawed
- 3/4 cup sugar-free chocolate frosting
What to Do
- Preheat oven to 350 degrees F. Line 18 mini-muffin cups with paper liners.
- In a medium bowl, combine graham cracker crumbs, sugar, and butter; mix well. Evenly press mixture into paper liners. Using your fingers, press over bottom and up sides of liners.
- Bake 5 minutes, or until crust begins to brown. Remove from oven and cool completely.
- In a medium bowl, whisk pudding mix and milk. Fold in whipped topping. Place in a resealable plastic bag and snip off one corner. Fill graham cracker crusts evenly with pudding mixture.
- In a small microwave-safe bowl, heat frosting 10 to 15 seconds; stir until smooth and pourable. Place in a small resealable plastic bag and snip off one corner. Top pudding mixture with a dollop of chocolate frosting. Refrigerate 4 hours or until ready to serve.
