Mediterranean Lamb Meatballs

Our Mediterranean Lamb Meatballs will transport you to the shores of Greece, no passport required! Pair them with our Creamy Tzatziki Sauce to take this diabetes dish over the edge.
What You'll Need
- 15 (6- to 8-inch) wooden or metal skewers
- 1 1/4 pound lean ground lamb
- 2 tablespoons tomato sauce
- 1/4 cup chopped fresh parlsey
- 1/2 onion, finely chopped (about 1/2 cup)
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
What to Do

If using wooden skewers, soak in water 15 to 20 minutes. Preheat broiler.

In a large bowl, combine all ingredients; mix well. Roll mixture into 15 balls and place on a rimmed baking sheet or broiler pan.
- Place one skewer into the end of each lamb meatball and broil 5 to 7 minutes on each side, turning once, until cooked through.
