Our easy, breezy recipe for Lemon Dijon Lamb Chops will leave you wondering why you don't make them more often. The lemon and Dijon flavor combination works perfectly, and the garlic adds a nice kick, too!
What You'll Need
- 1/8 teaspoon salt
- 1/2 teaspoon black pepepr
- 1/4 teaspoon dried thyme
- 2 cloves garlic, minced
- 2 teaspoons Dijon mustard
- 2 teaspoons lemon juice
- 1 teaspoon olive oil
- 4 (5-ounce) lean lamb loin chops, well-trimmed
What to Do

Preheat the broiler. In a small bowl, combine salt, pepper, thyme, and garlic. Stir in mustard, lemon juice, and olive oil.

Spread mixture over both sides of chops. Place chops on a lightly greased rack in a broiler pan.
- Broil 6 to 7 minutes on each side or to desired degree of doneness.
