Dressed-Up Grapefruit Salad

What You'll Need
- 4 cups shredded leaf lettuce
- 1 jar (20-ounce) refrigerated pink grapefruit sections, drained
- 1/2 cup thin red onion slices
- 1/4 cup Sweet Poppy Dressing (see Note)
What to Do
- Line 4 salad plates with shredded lettuce. Arrange grapefruit and onion on top, distributing evenly, and drizzle with dressing.
Notes
To make your own Sweet Poppy Dressing, in a medium bowl, whisk together 1/3 cup Splenda granulated sweetener, 1/3 cup rice or white wine vinegar, 1/4 cup canola or olive oil, and 1 tablespoon poppy seeds. Makes about 1/2 cup.
