Tasty Salmon Burgers

Take advantage of the healthy benefits of omega-3 fatty acids in salmon as you enjoy these delicious good-for-you and Tasty Salmon Burgers. You can even make these mini-size if you'd like to serve 'em as appetizers. Either way, they'll lure everyone to the table.
What You'll Need
- 1 (12-ounce) can salmon, drained, with excess skin removed
- 1/3 cup finely chopped onion
- 1/4 cup liquid egg substitute
- 11 multigrain or reduced-fat saltine crackers, crushed, divided
- Cooking spray
What to Do
- Flake salmon in a bowl. Stir in onion, egg substitute, and 1/4 cup cracker crumbs, combining well.
- Use 1/3 cup salmon mixture for each patty. Flatten slightly and coat with crushed crackers.
- Preheat non-stick skillet over high heat. Liberally spray 1 side of each patty with cooking spray. Place patty sprayed-side down in skillet. Reduce heat to medium.
- Cook about 3 minutes. Spray top of patty and turn carefully with spatula. Cook 2 to 3 more minutes, or until patty turns golden brown.
