What You'll Need
- 2 zucchini, quartered lengthwise
- 1 (1-pound) eggplant, peeled, cut in 1/2-inch slices
- 1 red onion, cut in 1/2-inch slices
- 1/2 cup crumbled feta cheese
What to Do
- Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and coat with cooking spray.
- Spread vegetables on prepared baking sheet.
- Bake 20 to 25 minutes; stir once halfway through cooking. Cut into bite-size pieces, sprinkle with cheese, and serve immediately.
