Veggies with Cream Sauce

If you have diabetes or know anyone who is watching their diet, you know that recipes that are cream-based may seem off limits. Well, we are delighted to share our Veggies with Cream Sauce recipe that we've lightened up so you can enjoy all the richness a cream sauce offers.
What You'll Need
- 1 bag (16-ounce) frozen vegetable blend (such as broccoli, cauliflower, carrots)
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 1/4 cup fat-free milk
- Dash ground nutmeg
What to Do
- Cook vegetables according to package instructions. Drain and keep warm.
- In a medium saucepan over medium heat, melt butter. Whisk in flour and cook about 2 minutes. Add milk and nutmeg. Cook until sauce thickens, stirring occasionally.
- Spoon sauce over vegetables and serve.
Notes
TIP: Add 1/2 cup reduced-fat shredded Swiss cheese to thickened sauce, if desired.
