Whether you're a vegetarian or are cooking for someone who is, these Tex-Mex Vegetarian Tacos fit a diabetes diet perfectly!
What You'll Need
- 1 cup veggie protein crumbles
- 1/4 cup salsa
- 3 tablespoons water
- 4 (6-inch) taco shells
- 1/4 cup finely shredded reduced-fat Colby-Jack cheese
What to Do
- Preheat oven to 350 degrees F.
- In a medium skillet over low heat, combine veggie crumbles, salsa, and water.
- Heat taco shells on a baking sheet 5 to 6 minutes, or until hot and crisp.
- Spoon one-quarter of mixture into each taco shell and sprinkle with one-quarter cheese.

TIP: Serve with shredded iceberg lettuce and chopped tomatoes.
