Simple Butternut Squash

Butternut squash is a fall fave, and definitely belongs at your dinner table the whole season. It makes a great, healthy side dish for any protein, especially Tom the Turkey on his big day!
What You'll Need
- 1 large butternut squash
- 2 tablespoons margarine
- 2 tablespoons light brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- Preheat oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil. Place squash on baking sheet.
- Bake 1-1/4 to 1-1/2 hours, or until a knife can be inserted into squash. Remove from oven and let cool slightly, 15 to 20 minutes.
- Cut squash in half lengthwise; scoop out seeds and discard. Using a spoon, remove flesh and place in a casserole dish. Add remaining ingredients and mix well. Serve immediately.
Notes
Wanna get a head start on your cooking? You can make this ahead of time and just cover and refrigerate it until ready to serve. Then all you have to do is warm it in the oven until heated through.
