Parmesan-Basil Tomato Bake

Many restaurants serve baked tomatoes as a colorful, edible garnish to a main dish meal. But they're really so good, they deserve to be considered a side dish, and one that is perfectly acceptable on a diabetes diet. Our Parmesan-Basil Tomato Bake is so delicious you'll wonder why you never made it before!
What You'll Need
- 2 slices light-style wheat bread
- 4 tomatoes, halved
- 3 tablespoons grated Parmesan cheese
- 1 teaspoon dried basil
What to Do
- Preheat oven to 375 degrees F.
- Process bread in blender, one slice at a time, to make soft breadcrumbs.
- Arrange tomato halves in shallow baking pan. Mix breadcrumbs, cheese, and basil and sprinkle over tomato halves.
- Bake 15 to 20 minutes, or until topping browns.
