What You'll Need
- 1 1/4 pound eggplant with peel on, cut into 3/8-inch slices
- 1/2 cup panko (Japanese-style) bread crumbs
- 3 tablespoons grated Parmesan cheese
- 2 egg whites, beaten
What to Do

Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil; coat with cooking spray.

In a shallow dish, combine bread crumbs and cheese. Dip eggplant slices in egg and coat with crumbs. Place on prepared baking sheet.
