What You'll Need
- 2 tablespoons olive oil
- 2 zucchini, sliced
- 2 yellow squash, sliced
- 2 onions, sliced
- 2 tomatoes, quartered
- 2 garlic cloves, minced
- 1/4 cup pitted green or black olives, sliced in half
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- In a large skillet or wok, combine all the ingredients.
- Cook over medium heat for 10 to 15 minutes, or until the zucchini and yellow squash are tender, stirring occasionally.
