Valentine's Veal

Whether you're sharing Valentine's Day dinner with the kids or another couple, this fancy Valentine's Veal is laden with artichokes and sun-dried tomatoes and is sure to melt your sweetie's heart!
What You'll Need
- 1/4 cup all-purpose flour
- 1 egg, beaten
- 1 pound veal cutlets, pounded to 1/4-inch thickness
- 2 tablespoons butter
- 1 (14-ounce) can artichokes, drained and chopped
- 1/4 cup sun-dried tomatoes, reconstituted and chopped
- 1/3 cup dry vermouth or white wine
- Juice of 1 lemon
What to Do
- Place the flour and egg in separate shallow dishes. Coat the veal with flour, then egg.
- In a large skillet, melt the butter over medium heat. Cook the veal in batches for 2 to 3 minutes per side, or until golden.
- Stir in the artichokes, sun-dried tomatoes, vermouth, and lemon juice. Cook for 2 to 3 minutes, or until the sauce thickens. Serve immediately.
