Turkey Joes

No need to skip enjoying a popular favorite like Sloppy Joes just 'cause you have diabetes. Our Test Kitchen simply switched out the beef for some lower in fat ground turkey breast, so you can enjoy this recipe for Turkey Joes, too!
What You'll Need
- 1/2 pound ground turkey breast
- 1 cup frozen pepper stir-fry (sliced green, red, yellow bell peppers and white onions)
- 1/4 cup no-salt-added tomato sauce
- 1/4 cup fat-free barbecue sauce
- 3 tablespoons water
- 4 sugar-free whole wheat hamburger buns
What to Do
- Coat a nonstick skillet with cooking spray. Over medium heat, brown turkey. Remove from skillet and set aside.
- In same skillet, cook peppers and onion mixture until lightly browned. Return turkey to skillet and add tomato sauce, barbecue sauce, and water. Simmer about 8 minutes and add additional water if needed. Serve on hamburger buns.
