What You'll Need
- 4 poblano chilies
- 1/2 pound hot Italian turkey sausage, casings removed
- 1 cup reduced-fat cottage cheese, drained
- 1/2 cup reduced-fat shredded mozzarella cheese
What to Do
- Preheat oven to broil. Line a baking sheet with aluminum foil. Split poblano chilies with sharp knife, remove seeds, but leave stems on. Rinse and pat dry on paper towels. Place on baking sheet.
- Broil chilies on all sides 4 to 5 inches from heat, until skin chars. Remove and place in plastic bag and seal. When cool, carefully peel skin away.
- Reduce oven to 350 degrees F.
- In a medium skillet over medium-high heat, brown sausage. Combine sausage with cottage cheese. Spoon sausage mixture into chilies and sprinkle each with 2 tablespoons mozzarella cheese.
- Bake 15 minutes or until cheese melts; serve immediately.
