What You'll Need
- 1 (1-pound) package frozen stew vegetables
- 1 (2-pound) boneless pork loin roast, cut into 1-inch pieces
- 1 (14-ounce) can no-salt diced tomatoes
- 1/2 teaspoon dried thyme, crushed
What to Do
- Place stew vegetables in a 4- to 5-quart slow cooker.
- Coat a medium nonstick skillet with cooking spray. Over medium-high heat, brown pork on all sides; transfer to slow cooker.
- Add tomatoes and thyme and cook on LOW 6 to 8 hours, or until pork is very tender.
