Generally Spanish Rice has been made with white rice, but our Test Kitchen took the challenge to create a diabetic Spanish Rice recipe using brown rice. The result? You can enjoy it without guilt, and without sacrificing taste.
What You'll Need
- 1 cup chopped onion
- 1 cup chopped bell pepper (any color)
- 1 can (8-ounce) tomato sauce with roasted garlic
- 2 cups cooked brown rice
What to Do
- Coat a medium nonstick skillet with cooking spray. Over medium-high heat, cook onion and bell pepper until tender, stirring occasionally.
- Stir in tomato sauce and brown rice; cook until heated through.
