Mojo (pronounced mo-ho) is a traditional Cuban combination of garlic, citrus juice, and a variety of herbs and spices. Its intense flavor gives just about any type of meat a fun and exciting taste, including Mojo Pork Gliders, while remaining low in fat, calories, and carbohydrates!
What You'll Need
- 1/2 cup mojo marinade (see Note)
- 2 scallions, chopped
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, minced
- 1 pound boneless pork cutlets, cut into 12 chunks
- 1 zucchini, cut into 12 chunks
- 12 cherry tomatoes
- 6 (12-inch) wooden or metal skewers
What to Do
- If using wooden skewers, soak in water for 15 minutes.
- In a 9 x 13-inch baking dish, combine the mojo marinade, scallions, parsley, and garlic; mix well.
- Alternately skewer 2 chunks of pork, 2 chunks of zucchini, and 2 cherry tomatoes onto each skewer. Place the skewers in the baking dish, turning to coat well. Cover and marinate in the refrigerator for 2 to 3 hours, turning the skewers occasionally.
- Preheat the grill to medium heat. Grill the skewers for 4 to 5 minutes per side, or until no pink remains in the pork.
