Penne Toss

If you're in the mood for a delicious pasta dish for dinner then this recipe is for you. Take ordinary penne pasta and mix it up with tomatoes, onions, garlic and cheese and you've got the makings of an all-star diabetes-friendly dinner!
What You'll Need
- 1 pound penne pasta
- 1 (28-ounce) can diced tomatoes, undrained no-salt-added
- 1/4 cup olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup (4 ounces) shredded mozzarella cheese
- 1/4 cup chopped fresh basil
What to Do
- Cook the pasta according to the package directions; drain.
- Meanwhile, in a large bowl, combine the diced tomatoes, olive oil, onion, garlic, vinegar, oregano, salt, and pepper; mix well. Add the cooked pasta; toss to coat.
- Sprinkle with the mozzarella cheese and chopped basil, and toss again; serve warm.
