Just because you're making an effort to eat healthier doesn't mean you can't enjoy a treat now and then. Indulge your sweet tooth with our Rainbow Bars, which include low-fat peanut butter and candy-coated chocolate pieces.
What You'll Need
- 1/2 cup granulated Splenda
- 1/2 cup packed brown sugar
- 1/2 cup canola oil
- 1/4 cup reduced-fat peanut butter
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup mini candy-coated chocolate pieces
What to Do
- Preheat oven to 350 degrees F.Coat a 9- x 13-inch baking dish with cooking spray.
- In a bowl, combine the Splenda, brown sugar, oil, peanut butter, egg, and vanilla.
- In another bowl, combine flour, baking soda, and salt; stir into the peanut butter mixture. Stir in the candy pieces. Spread into prepared pan.
- Bake 12 to 15 minutes or until lightly browned. Cool on a wire rack.
