Lycopene-rich roma tomatoes and fresh garlic drizzled with olive oil then baked off on slices of French bread are simply awesome appetizers. Our Roma Bruschetta is perfect to serve before your favorite Italian dish, or for a party.
What You'll Need
- 4 (1/2-inch-thick) diagonal slices French bread
- 1 clove garlic
- 8 teaspoons extra-virgin olive oil
- 1/4 cup chopped roma tomatoes, drained
What to Do
- Preheat broiler. Line a baking sheet with foil and add bread slices.
- Toast bread slices on both sides until lightly browned. Rub each slice gently with garlic clove and drizzle each with 2 teaspoons oil.
- Spoon 1 tablespoon tomatoes over each slice. Serve immediately.
Notes
TIP: Any firm, ripe tomatoes can be used.
