Alice Springs Chicken

This restaurant-fancy chicken recipe is one you'll want to use when you really want to impress company! We think the layer of mushrooms and flavorful sauce really add an extra-special flair to our Alice Springs Chicken. The best part? You can whip this up in just 30 minutes!
What You'll Need
- 2 teaspoons canola oil
- 1 1/2 cup sliced mushrooms
- 1/4 cup diced lean ham or Canadian bacon
- 4 (6-ounce) boneless, skinless chicken breasts
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 (10-3/4-ounce) can low sodium reduced-fat cream of chicken soup
- 3/4 cup reduced-fat milk
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 1/4 cup shredded reduced-fat mozzarella cheese
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large skillet over medium-high heat, heat oil; saute mushrooms and ham 5 to 7 minutes, or until they begin to brown.
- Sprinkle chicken on both sides with garlic powder and pepper; place in baking dish. Spoon mushroom mixture evenly over chicken.
- In a medium bowl, whisk soup, milk, thyme, and onion powder. Spoon over mushroom layer. Sprinkle with cheese.
- Bake 25 to 30 minutes, or until chicken is no longer pink in center.

Have made this.. I started with "Sprout's" chicken breast.. 3 breast ,,,,,,,,,, 12.69 for the 3.. Largest package they had in the cooler.. (It's important) plus I used 3 different mushrooms.. Mushroom Gravy from "Thrive" market.. This is non CMO.. The 3 different sliced mushrooms are sauted with sliced shallots, 3 cloves of garlic, Rosemary. (these 3 are sauted to translucent color)..Add the mushroom gravy to the pan and add 1 16oz container of heavy cream.. Stir until evenly blended.. (The gravy is a powder).. The 3 beast have all of this time been in the oven @ 375... (The breast are "BIG").. Baste the breast with "REAL" butter,,,,,,, @ 40 minutes add the contents to the breast in the baking dish.. Let finish baking and Enjoy.. I serve this over "Basmati long grain brown rice.. Most of these items in this writing are purchased online (Except the breast),,,, it makes a difference..

Just made this tonight and it was very good. I didn't have cream of chicken but substituted it with cream of celery and chicken stock. Came out just fine. Also used a full 8 ounces of mozzarella since I didn't want to store the balance.

What restaurant is this Alice Springs chicken served? Is there an Alice Springs restaurant or restaurant chain? If so, I have never heard of it and have never heard of this dish, but my husband is a diabetic so I am always looking for new and interesting recipes to make that are also quick and easy.

Good morning! Our recipe is not served in a restaurant. We say it's restaurant-fancy, meaning it has that familiar look and taste of a delicious chicken dinner you'd get in a restaurant. I hope that clarifies things! :)

The flavor combination in this dish sound good to me but I would probably use bacon instead of ham. Also, would use real onion and garlic. Don't recall ever having the Alice Springs chicken at the restaurant but sure will next time we are there. Fortunately we are not diabetic so any changes would not harm us.

I made this for supper tonight with minor modifications. I substituted bacon for the ham and added sliced onions. I served it over noodles with a side of green beans and it was a hit with my husband and three kids. One con was the sauce got really runny in the baking process and I had to bake it longer than recommended in order to get the chicken cooked. Next time, I would slice my chicken breast into strips or bake in on a higher heat, maybe 375.

Hello - Our version is only loosely based on the restaurant favorite, since we made modifications to make it fit a diabetic diet. We think you'll find that it's pretty tasty, too!

My hubby and I didn't really care for this. Even though I added minced garlic and some chopped green chilies to the dish, it was still very bland. So, for the leftovers, I went a bit further and dumped a bunch of salsa on it. It was ok that way, but not a dish I make again for sure.

I have made this for a ladies card luncheon and I can tell you it is fantastic. I substituted the ham for 1/4 cup of peas and 1/2 cup of halved green grapes. For additional flavor if you make a larger amount, you can also add 1 can of cream of celery. For added crunch you can sprinkle toasted sliced almonds on top. Love this for an afternoon luncheon!
