Dish up a spoon of one of our favorite greens and you'll be more than pleased. Our Creamy Spinach Casserole is the perfect side dish for any occasion, 'cause it tastes like something you labored hours over, but is actually really easy to make! That's because we start out with frozen spinach; it's a sure way to make sure this dish is flavorful and fast.
What You'll Need
- 1 (15-ounce) package frozen chopped spinach, thawed and drained well
- 1 cup cooked wild rice
- 1 1/2 cup reduced fat shredded Cheddar cheese
- 1 (10-1/2-ounce) can fat-free cream of mushroom soup
- 1 tablespoon light margarine, melted
- 1 teaspoon onion powder
- 1/4 teaspoon ground nutmeg
What to Do
- Preheat oven to 350 degrees F. Coat a 1-quart casserole dish with cooking spray.
- In a large bowl, combine all ingredients; mix well. Spoon into casserole dish.
- Cover and bake 30 minutes, or until heated through.

This is going to be a recipe I make very soon. I am thinking I will use the riced cauliflower instead of rice. I have loved using the riced cauliflower in any recipe that calls for rice, because it really lowers the carbs. Spinach is something even our kids will eat! This looks like it will be the perfect side dish that they will all love. It can be so hard finding foods that our diet restricted child can eat. I try hard to not make different foods for her and instead make something they will all like. Thank you so much for this recipe!
