We've come up with a muffin recipe that's the perfect go-along for a steaming mug of something fall-flavored. Our Pumpkin Chip Muffins are a low-fat treat that you'll just love to eat!
What You'll Need
- 1 1/2 cup whole wheat flour
- 1/2 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 (15-ounce) can pure pumpkin
- 1/2 cup plain nonfat yogurt
- 1 egg, beaten
- 1/2 cup sugar-free chocolate chips
What to Do
- Preheat oven to 350 degrees F. Coat a 12-cup muffin tin with cooking spray.
- In a large bowl, combine flour, sugar, cinnamon, baking powder, baking soda, and salt; mix well. Add pumpkin, yogurt, and egg; mix until thoroughly combined. Stir in chocolate chips. Spoon batter evenly into muffin cups.
- Bake 20 to 24 minutes, or until toothpick comes out clean. Let cool 5 minutes, then remove to a wire rack to cool completely.

You know how you just cannot pass up a good deal when you see one. Well, I am going to use this recipe for one of my hand made mixes next Christmas. This mix in one jar, along with Friendship Tea in another, and you has the perfect gift basket for that unexpected gift exchange, or for that secret Santa.

These pumpkin muffins are a wonderful diabetic treat. I honestly couldn't tell that they were made with sugar-free chips. AND they're even better served warm! I will be making these again.

This was a really tasty pumpkin treat. I stuck to having only one, but my family ate the rest and they had no idea it was wheat flour or sugar-free chips.
