Cauliflower Griddle Cakes

These Cauliflower Griddle Cakes will trick anyone into eating their vegetables, and loving them! After all, what's not to love in these cheesy and nutritious cakes?
What You'll Need
- 1 head cauliflower, cut into florets
- 1/4 cup chopped onion
- 1/2 cup shredded low-fat Cheddar cheese
- 1/2 cup panko bread crumbs
- 2 large eggs, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
- 2 teaspoons olive oil, divided
What to Do
- In a large pot of boiling water, cook cauliflower and onion 10 to 15 minutes, or until fork-tender; drain.
- Mash cauliflower with an electric mixer until smooth. Stir in cheese, bread crumbs, eggs, salt, and cayenne pepper, if desired. Form mixture into twelve 2-inch patties.
- In a large skillet or griddle over medium heat, heat 1 teaspoon oil. Cook patties in batches, 4 to 5 minutes per side, or until golden and set, adding remaining oil as needed. Keep warm in oven on low temperature until all batches are finished.

I would like to see how many cups of cauliflower you get out of a head of cauliflower so I could use either frozen or riced cauliflower.

This sounds very tasty. It is a lot like potato pancakes. I have often seen different ways to make cauliflower, but have not tried them. I will have to try this. I get in a rut sometimes and am afraid to try something new. I am always on the look out for more healthy recipes.

I would NEVER BOIL cauliflower and onions. It would ruin the flavor unless you like tasteless mush and it removes the nutrients. Instead I would saute the onions and roast the cauliflower then put them in a food processor to combine. Instead of bread crumbs, I would use cooked quinoa, millet, buckwheat or brown rice to give it more protein and fiber. Instead of cayenne, I would add fresh minced garlic. I have a head of cauliflower so I plan on making this recipe with my alterations. Happy Cooking everyone!

Make sure the cauliflower is very well drained. Your best bet is to osh on it lightly in the colander or you wil end up with a very watery product.
