We all crave pasta from time, but it isn't always the best choice when you're following a diabetic diet. Luckily, there are some veggies, like zucchini, that make healthy and yummy substitutions. We think you'll love our recipe for Zoodles, which is low-fat, low-carb, and very tasty!
What You'll Need
- 3 zucchini
- 2 tablespoon margarine
- 2 clove garlic, minced
- 1/8 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoon grated Parmesan cheese
What to Do
- Using a potato peeler, cut zucchini into thin, noodle-like strips.
- In a large skillet over medium heat, melt margarine. Add garlic, zucchini, salt, and pepper and cook 6 to 8 minutes, or until tender. Sprinkle with Parmesan cheese just before serving.
Notes
This is a delicious side dish but by adding chicken or shrimp, you've got a great main dish!
