What You'll Need
- 1 package (16-ounce) sliced frozen okra, slightly thawed
- 1 tablespoon canola oil
- 2 tablespoon chopped green chilies
- 2 can (16-ounce) no-salt-added diced tomatoes with liquid
- 1/4 teaspoon garlic powder
What to Do
- Coat a medium nonstick skillet with cooking spray. Over medium-high heat, cook okra until excess liquid evaporates. When okra starts to stick, add oil. Continue to cook until okra becomes crisp-tender, stirring constantly.
- Stir in green chilies, tomatoes, and garlic powder. Reduce heat to medium and cook about 30 minutes, stirring frequently.

TIP: To prepare with fresh okra, heat oil in skillet over medium-high heat. Add okra and stir constantly until it is crisp-tender.
