Delicate baby spinach and hearty cannellini beans make for a tasty marriage of flavors that are good for you, too. So Use Your Beans and Greens and enjoy this recipe as a super diabetic side dish.

What You'll Need

  • 1 cup chopped onion
  • 1 can (15-1/2-ounce) cannellini beans (white kidney beans) with liquid
  • 1/2 cup water
  • 3 cup fresh baby spinach
  • 1 tablespoon lemon juice

What to Do

  1. Coat a large nonstick skillet with cooking spray. Cook onion until tender.

  2. Add beans and water. Bring to a boil, stir in spinach, and cook just until spinach wilts. Sprinkle with lemon juice and serve immediately.
