What You'll Need
- 1 cup chopped onion
- 1 can (15-1/2-ounce) cannellini beans (white kidney beans) with liquid
- 1/2 cup water
- 3 cup fresh baby spinach
- 1 tablespoon lemon juice
What to Do
- Coat a large nonstick skillet with cooking spray. Cook onion until tender.
- Add beans and water. Bring to a boil, stir in spinach, and cook just until spinach wilts. Sprinkle with lemon juice and serve immediately.
