Stuffed Zucchini Boats

Our Stuffed Zucchini Boats make a great side dish to any meal, but are hearty enough to stand on their own, too. One of our readers says, "These were awesome! I made them for my mom...and she loved them!"
What You'll Need
- 4 medium zucchini
- 2 tablespoon olive oil
- 1 small onion, chopped
- 3 clove garlic, minced
- 1/2 cup grated Swiss cheese
- 2 tablespoon all-purpose flour
- 2 tablespoon chopped fresh parsley
- 1 eggs, beaten
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoon grated Parmesan cheese
What to Do

Preheat the oven to 375 degrees F. Cut the zucchini lengthwise and scoop out the centers, leaving the shells 1/2 inch thick. Finely chop the meat from the center of the zucchini.

In a large skillet, heat the oil over medium-high heat and saute the chopped zucchini, onion, and garlic for 3 to 5 minutes, or until the onion is tender.

In a large bowl, combine the Swiss cheese, flour, parsley, egg, salt, and pepper; mix well. Stir in the vegetable mixture.

Fill the zucchini shells with the mixture and sprinkle the tops with the Parmesan cheese. Bake for 30 to 35 minutes, or until the filling is firm and golden.
