What You'll Need

  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 (16-ounce) package sliced frozen okra, cooked, drained
  • 2 (15-ounce) cans diced tomatoes with garlic, oregano, and basil

What to Do

  1. Coat a large nonstick skillet with cooking spray. Over medium heat, cook onion and bell pepper 4 to 5 minutes, or until tender, stirring occasionally.

  2. Add okra and tomatoes and cook until heated through.
