What You'll Need
- 2 tablespoon olive oil
- 3 clove garlic, minced
- 2 zucchinis, diced
- 1/2 cup chopped onion
- 1 cup frozen corn kernels, thawed
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/8 teaspoon black pepper
- 1 tablespoon lime juice
- 2 tablespoon chopped fresh cilantro
- 2 tablespoon grated Parmesan cheese
What to Do
- In a large skillet over medium high heat, heat oil. Add garlic, zucchini, and onion to the skillet and cook for 6-7 minutes, or until soft, stirring occasionally.
- Add corn, basil, thyme, and pepper. Cook for 5 minutes, stirring occasionally, or until heated through. Stir in lime juice and cilantro.
- Sprinkle with Parmesan and serve.
