Roasted Plum Tomatoes

You want a versatile recipe? Stop here. Roasted Plum Tomatoes can be served by themselves as a side dish, or as a topping for cooked pasta, rice, or potatoes, or almost anything! See, they really ARE versatile!

What You'll Need

  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 10 plum tomatoes

What to Do

  1. Preheat oven to 450 degrees F.
     
  2. In a medium bowl, combine all ingredients except tomatoes. Cut tomatoes lengthwise and squeeze out the seeds and juice. Toss in oil mixture and place in a 7- x 11-inch baking dish.
     
  3. Bake 20 minutes, or until tender but not overcooked.
     

Note

For a whole new taste, sprinkle the tomatoes with 1/2 cup of your favorite shredded cheese right after taking them out of the oven then return them to the oven for 3 to 4 more minutes, until the cheese is melted.
