Italian-Style Zucchini with Tomatoes

Cherry tomatoes and zucchini come together in this recipe to create a colorful and healthy dish that is a perfect companion to any meal. Plus, with just a few basic ingredients, this dish comes together in no time at all!

What You'll Need

  • 3 zucchini, sliced
  • 1 cup water
  • 1 tablespoon butter
  • 1/2 onion, thinly sliced
  • 1 cup halved cherry tomatoes
  • 1/2 teaspoon dried basil
  • 3/4 teaspoon garlic powder

What to Do

  1. In a large skillet, add zucchini and water; bring to a boil over high heat.
     
  2. Reduce heat to low and simmer, covered, until zucchini is just tender, about 4 minutes. Drain zucchini.
     
  3. In same skillet, melt butter over medium heat. Add zucchini, onions, tomatoes, basil, and garlic and simmer about 5 minutes, or until heated through.
