Creamy Crispy Stuffed Onions

Roasted onions taste great on their own, but when you roast 'em, stuff 'em with a creamy mixture, and then top them off with a little crunchy Panko, they're really phenomenal. Our recipe for Creamy Crispy Stuffed Onions will make everyone at the dinner table say, "Mmm!"
What You'll Need
- 3 onions, peeled and cut in half horizontally
- 1 tablespoon canola oil
- 1/4 cup reduced-fat cream cheese
- 2 tablespoon fat-free sour cream
- 1 clove garlic, minced
- 1 teaspoon fresh rosemary, finely chopped
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoon Panko bread crumbs
- 1 tablespoon margarine, melted
- 1 teaspoon reduced-fat bacon bits
What to Do
- Preheat oven to 400 degrees F. Place onions cut side up in a 9 x 13-inch baking dish. Drizzle with oil. Bake for 50 minutes. Remove from oven and allow to cool slightly. Carefully remove the center of onion, leaving a shell.
- In a small bowl, combine cream cheese, sour cream, garlic, rosemary, salt, and pepper. Evenly spread filling on top and into center hole of onion.
- In a small bowl, combine Panko, margarine, and bacon bits. Sprinkle evenly on each onion. Bake 10-15 minutes, or until golden brown.
