Melty Cheddar cheese sauce is baked over tender cauliflower in this recipe for Cheesy Cauliflower. It's the perfect side dish to go along with fresh ham, roast chicken, or any other main dish favorite!

- 1/4 cup (1/2 stick) butter
- 1 tablespoon all-purpose flour
- 3/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 3/4 cup reduced-fat milk
- 2 cup (8 ounces) shredded sharp Cheddar cheese
- 2 (16-ounce) packages frozen cauliflower florets, thawed
What to Do
- In a large saucepan over medium-heat, melt butter. Add flour, salt, and cayenne pepper; mix well.
- Stir in milk and cheese; heat until cheese is melted.
- Add cauliflower and stir until well combined. Simmer over low heat for 8 to 10 minutes, or until heated through.
