What You'll Need
- 1/4 cup whole wheat flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons canola oil
- 4 (4-ounce) veal cutlets (1 pound total)
- 1/4 cup sun-dried tomatoes, reconstituted and slivered
- 3 tablespoons chopped fresh basil, divided
What to Do
- In a shallow dish, combine the whole wheat flour, salt, and pepper; mix well. Place veal in flour mixture and turn to coat completely.
- In a large skillet, heat oil over medium-high heat. Add veal, sundried tomatoes, and 2 tablespoons basil. Saute veal for 2 to 3 minutes per side, or until browned and cooked through.
- Sprinkle with remaining basil, and serve.
