What You'll Need
- 1 tablespoon light margarine
- 12 ounce lean turkey sausage
- 1 cup finely diced onion
- 1 cup finely diced celery
- 8 slice whole wheat bread, cut into 1/2-inch cubes, toasted
- 1 tablespoon grated Parmesan cheese
- 1/2 teaspoon poultry seasoning
- 1/2 cup egg substitute
- 1/2 cup low sodium fat-free chicken broth
What to Do
- Preheat oven to 350 degrees F. Coat a 12-cup muffin tin with cooking spray.
- In a large skillet over medium-high heat, melt margarine; add sausage, onion, and celery and cook 8 to 10 minutes, or until sausage is no longer pink and is beginning to brown, stirring occasionally. Place in a large bowl, add remaining ingredients, and toss until well mixed.
- Place about 1/3 cup of sausage mixture in each muffin cup, pressing down gently to pack together.
- Bake 20 to 25 minutes, or until lightly browned on top and heated through. Let cool 3 to 5 minutes, then remove from muffin tin and serve immediately.
