What You'll Need
- 3 tablespoon light margarine
- 1/2 cup chopped onion
- 2 sprigs thyme, leaves removed from stem
- 1 medium butternut squash (about 2 pounds), peeled and cut into 1-inch pieces
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 4 cup water
- 2 tablespoon milk
What to Do
- In a large saucepan, over medium heat, melt margarine. Add onion and thyme and cook 5 minutes or until onion is tender, stirring occasionally.
- Add squash, sugar, and salt and cook 3 minutes. Add water and bring to a boil. Reduce heat to low and simmer, uncovered, 15 to 20 minutes or until squash is tender.
- Working in batches, transfer soup to a blender and puree until smooth; return to the saucepan. Stir in milk and heat on low 3 to 5 minutes or until heated through.
