Onion lovers will love our recipe for Vegetarian Onion Soup! This soup puts a vegetarian spin on traditional french onion soup, making it a nutritious and tasty alternative!
What You'll Need
- 3 medium-sized onions, thinly sliced
- 5 1/4 cup ready-to-use vegetable broth, low-sodium
- 1 cup water
- 1/2 cup dry red wine
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1 whole-wheat pita bread, toasted and cut into quarters
What to Do
- Coat a soup pot with nonstick cooking spray. Add the onions and sauté over medium heat for 10 to 12 minutes, or until browned. Add the broth, water, wine, and pepper; mix well. Reduce the heat to low and simmer for 10 minutes. Add the cheese and simmer for 5 to 10 minutes, or until thoroughly heated.
- Pour into bowls and top each with a wedge of pita bread.
Notes
- If you want that traditional cheesy topping, top each pita wedge with a slice of low-fat provolone cheese and broil or toast it in a toaster oven until the cheese melts. Carefully place each over a bowl of soup.
- To make this a gluten-free recipe, use nonstick cooking spray with no flour added, gluten-free vegetable broth, and a gluten-free substitute for the pita wedge.
- Depending on your meal plan, you can substitute the red wine with cooking sherry or leave it out altogether. Either way, this restaurant favorite will have you crying for joy over the taste... not the onions!
