Slow Cooker Squash Soup

A bowl of our Slow Cooker Squash Soup will certainly keep you feeling warm and cozy. This simple soup recipe is a fall-favorite, especially since it's loaded with some of our favorite seasonal ingredients.
What You'll Need
- 3 pound butternut squash, peeled and cut into 1-inch chunks
- 1 apple, peeled, cored, and diced
- 1 cup chopped sweet onion
- 2 cup low sodium, fat-free chicken broth
- 1 cup lowfat milk
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- In a 4-quart or larger slow cooker, combine squash, apple, onion, and chicken broth.
- Cover and cook on HIGH 3 hours, or until squash is soft. Place mixture in a blender or use an immersion blender; puree until smooth.
- Pour mixture back into slow cooker and add remaining ingredients; mix well. Cook 15 minutes, or until heated through.
