There's nothing like cozying up to a bowl of homemade chicken soup, especially when it's cool outside or you're feeling under the weather. Our Slow Cooker Chicken and Rice Soup is simple and can be prepared the night before, so your family can enjoy bowls of comfort the very next day.
What You'll Need
- 3 carrots, peeled and sliced
- 3 stalks celery, sliced
- 1/2 cup onion, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon ground sage
- 1/2 teaspoon black pepper
- 3/4 cup uncooked wild rice
- 3 boneless skinless chicken breasts (about 1-1/2 pounds)
- 6 cup reduced-sodium fat-free chicken broth
- 2 tablespoon chopped fresh parsley
What to Do
- In a 6-quart slow cooker, combine carrots, celery, onion, garlic powder, sage, pepper, and wild rice. Top with chicken and pour chicken broth over chicken.
- Place the lid on the slow cooker and cook on low heat for 6 to 6-1/2 hours, or on high heat for 3 hours. Carefully remove chicken and shred with forks. Return to the slow cooker, add parsley, and stir.
