Our classic take on Simple French Onion Soup saves you the guilt and calories without sacrificing taste. Whether you want to warm up from the inside out, or are looking for something to complete your bistro menu, this soup is just the ticket!
What You'll Need
- 5 onions, thinly sliced
- 1 cup unsweetened apple juice
- 4 cup sodium-free beef broth
- 1 cup water
- 1/4 cup dry red wine
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 6 thin slices French bread
- 1/2 cup shredded Swiss cheese
What to Do
- Coat a soup pot with cooking spray.
- Add onions and saute over medium heat 12 to 15 minutes, or until browned.
- Add juice, broth, water, wine and pepper. Mix well and bring to a boil. Reduce heat to low and simmer for 15 minutes.
- Slowly stir in Parmesan cheese and simmer 5 to 10 minutes, or until thoroughly blended.
- Meanwhile, in oven or toaster, toast French bread until slightly brown, sprinkle with Swiss cheese and allow to melt. Ladle soup into bowls and top each with a slice of toasted cheese French bread.
