What You'll Need
- 1/4 pound hot Italian-style turkey sausage, casing removed
- 1/2 cup chopped onion
- 2 clove garlic, minced
- 2 (15-1/2-ounce) cans white navy beans, undrained, divided
- 1 (14-ounce) can reduced-sodium chicken broth
- 1 3/4 cup water
- 1/2 (10-ounce) package fresh spinach
- 1/4 teaspoon black pepper
What to Do
- Coat a soup pot with cooking spray; heat over medium heat.
- Add sausage, onion, and garlic, and sauté 8 to 10 minutes, or until onion is tender and sausage is no longer pink, stirring to break up sausage.
- Mash 1 can of navy beans until smooth. Add to soup pot along with chicken broth, water, and whole beans; bring to a boil.
- Add spinach and pepper, reduce heat to low, and simmer 5 minutes, or until spinach is wilted.
